
Kokkaffe - How to Brew
Kokkaffe (Boiled Coffee)
As far as my family is concerned there are no official measurements to making Kokkaffe.
Just about 1 tablespoon of course ground coffee and 200ml of water per person.
What you will need:
- Pot or kettle
- Fire (or way heat kettle)
- Water - about 200ml per person (6.75oz)
- Course ground coffee (close to French Press) - about 1 tablespoon per person
Instruction:
- Fill pot or kettle with desired amount of water.
- Heat the pot or kettle over the fire.
- When boiling add your ground coffee.
- Let boil for 30 seconds.
- Take off heat and let steep for 3-6 minutes.
- When grounds have settled to the bottom, carefully pour out coffee try not to disturb the grounds on the bottom. (If you are feeling fancy, you can pour though a paper filter to remove any potential grounds).
- Enjoy
There are regional and family variations to Kokkaffe across Sweden.
Some people:
- Add crushed (& rinsed) egg shell (some even do a whole cracked egg) when you add the coffee.
- Take the kettle off the heat before adding coffee.
- Add a piece of fish skin, or scale to the coffee.
- Re-boil the coffee 2 more times before drinking (triple boil).
- Add coffee to water before bringing water to a boil.
- Add a pinch of salt.
